Hainanese Chicken Rice is one of my favourite makan dish. There are few reasons why I like it…
- Cheap and cheerful
- “Steamed” version is allegedly healthy
- Can get it pretty much everywhere
In fact, I wanted the steamed chicken more than the rice, but due to the fact the rice is a by product of the chicken, I might as well just do it. Like any other food that I want to cook, I’ll do my research on the internet. In fact lately, I will try to search for a youtube video, so at least I know that the recipe is real 🙂

Everything seems fine, except that there’s not much information on how much of ingredients should I put. Given that it is fasting month, I had no choice but to base the ingredients based on my the colour. This is relevant to the rice itself. As far as I know from the video, the ratio of shallot to ginger is 1:1. The question is how much should I put in the rice. I guess no other choice but to use…. colour!
